Tomato Cucumber Salad

This tomato cucumber salad is simple to make with diced cucumber and ripe summer tomatoes. I like to add lemon juice instead of vinegar for a bright citrusy flavor.

Ingredients


Original recipe (1X) yields 4 servings

  • 2 ripe tomatoes, chopped

  • 1 cucumber, peeled and diced

  • 1 small white or red onion, chopped

  • 1 tablespoon lemon juice or to taste

  • salt and ground black peper to taste


Directions

  1. Gather all ingredients.

  2. Combine tomatoes, cucumber, and onion in a salad bowl. Sprinkle with lemon juice and season with salt and black pepper; toss until well combined.

  3. Cover and chill salad in the refrigerator until ready to serve.
